Brown Sugar Pork Chops with Pineapple Mango Salsa

This one is really easy.

4 Thick Center Cut Boneless Pork Chops
1 Tblsn Olive Oil
1 Tblspn Butter

For the Mango Salsa

One Ripe Mango, peeled, chopped small
1/2 Medium Red Onion, chopped small
1/4 Cup Chopped Cilantro, minced
1/4 cup Apple Sauce (I keep those little individual servings in my fridge)
2 Cloves Garlic, minced
1/4 cup crushed Pineapple
1/2 jalepeno, seeded and minced
2 tspn Fresh Ginger, minced

Chop up all ingredients and set aside (not refridgerated) for 15 minutes while you prepare the Flour mixture.

Flour Mixture:

1/2 cup Light Brown Sugar
1 cup Flour
1 Tblspn Ground Ginger
2 tspn Powdered Garlic
1 Tspn Powedered Onion

Wash the pork Chops, and pat dry with paper towels.

Mix the dry ingredients well and put on a paper towel or paper plate. Dredge Pork Chops in Flour mixture. Saute on Meduim heat for 10-12 minutes, turning once. It’s OK if it’s a little pink no matter what your mother told you when you were little.

Plate the Pork Chops and spoon the Mango Salsa on top.

Eat. It’s Good.
