Salmon with Cucumber Dill Sauce

2 -4 Fresh Salmon Filets, 4-6 ounce

1/3 cup Cucumber, seeded, finely chopped
1/2 cup Mayonnaise
1/2 cup Sour Cream
1/2 cup Parmesan Cheese
1/4 cup Fresh Dill, finely chopped
1 Clove Garlic, minced
1/4 tspn Salt
1/4 tspn Pepper

Preheat oven to 350 degrees.

Place the Salmon Fillets in a casserole dish (sprayed with cooking spray) just big enough for the filets that you are baking.

Mix the Cucumber, Mayo, Sour Cream, Parmesan, Dill, Garlic, Salt and Pepper in a bowl. Evenly cover all of the fillets with about 1/4 inch of the sauce. If you are careful, and don’t cross contaminate, you can use the leftover sauce as a dip.

Cover with Foil and bake for 15 minutes. Uncover and broil for 5 more minutes, until the cheese in the sauce browns a little.
