The Best Meatloaf
O.K. Let me just say I am not a fan of Meatloaf. In fact, my mother was pretty good at it, but because of her limited repertoire, she put herself on a schedule. Every Monday was Meatloaf night, and every Monday night I was at someone else’s house having something other than Meatloaf.
Unfortunately, Spud likes meatloaf… So I was forced to find a recipe that I could not only stomach, but enjoy. This keeps our relationship going.
I adapted this from a recipe on the web. I will indicate the changes I made…
1 1/2 lbs Ground Beef
1 1/4 tspns Salt
1 dash black pepper (I added about 1/4 tspn)
1 Egg
1 Cup Soft Breadcrumbs (I used Oatnut Bread)
1/2 cup Milk (I used Red Wine)
3 Tblspns Steak Sauce (I am an A-1 fan all the way)
1 Onion, Chopped (I like Red Onion)
1/2 Cup Green Bell Pepper, Chopped (I use Red Pepper… It’s much sweeter)
I add:
1/4 cup Celery, chopped
1 clove Garlic, minced
1 Pinch of Cayenne Pepper
1/2 cup Parmesan Cheese
4 Slices Bacon, raw
Preheat your oven to 350 degrees. Lightly grease an 81/2 x 4 1/2 inch loaf plan.
Combine all of the ingredients (except the bacon) and place the mixture into the loaf pan, spreading evenly. Place the raw bacon strips on top and bake at 350 for 1 hour, or until done.
This Meatloaf… even I can eat!
